1980s theme birthday party.
Filipino-American moms got together for a 1980s themed birthday party for our dear friend R four days ago. Most of us grew up in the 80s and 90s and when someone suggested the 80s theme birthday party, we all went nuts. LOL.
Anyway, it was a potluck party. Everyone brought special dishes for all to enjoy. Made some Chayote Cabbage with Pork Stir-Fry.
Pork frying with onion garlic.
Chayote and pork stir fry in a pot.
Chayote Squash and Pork Stir-Fry
I don’t cook that often at home. But when I do, I stay in my kitchen until the food is cooked and the place is cleaned.
1 lb. pork (for stir fry)
3 cloves garlic, crushed
1 small onion, chopped
1 tbsp. olive oil
2-3 pcs. chayote squash, peeled and cut into cubes (bite size)
1 beef bouillon cube
1 cup water
salt and pepper to taste
- In medium heat, saute garlic and onion until brown and soft.
- Add pork. Stir fry for about 5-8 minutes until pork is brown.
- Sprinkle a dash of salt and a dash of black pepper.
- Simmer for 5 minutes while cooking in it’s own sauce. Stirring while simmering.
- Add chayote squash, water, and the beef bouillon. Stir to blend and let simmer for 5-10 minutes or until the vegetables and meat are tender. Season with salt and pepper to taste.
- Serve hot with rice.
Pretty birthday cake.
The little ones playing the Cup Game. They had so much fun!
Everyone had a great time at the party, I think. Especially when we started the disco and karaoke in the evening.
It was a very fun evening I had few weeks ago. My best friend NJ and I had a double birthday celebration at her house in Forth Worth. I am still cannot find the words how enchanted I was of how beautifully the party was planned and put together very successfully. We both had not idea how the party would be like because there was no tiny hint. Not one little bit. Our dear friends were very good in hiding clues. Would you believe that they did a Casino Themed Birthday Party? NJ and I like going to the casinos. 😀 We don’t do it very often but we enjoy going.
NJ and me. Birthday banner.
Anyway, it’s my 40th birthday and I can say that this was it was a big celebration to date. NJ is in her late 20s already. The last time we celebrated our birthday together was in 2009 when we were neighbors in Fort Worth. We went Downtown and had fun at the disco and karaoke at City Streets (now closed). Those were good times, I tell ya.
Lots of food. Yum.
The party that night was a blast. The decorations were amazing and the food was abundant. Thanks to the guests who brought delicious American and Filipino foods. In addition, NJ’s hubby and friends had set up a red carpet and casino. NJ and I had a wonderful night on our birthday party. They were very thoughtful with donating to my feeding program next month. NJ, her sister, my daughter, and I are flying together to the Philippines for a vacation this month. And one of the things in my agenda was having a small Thanksgiving feast for the children in my neighborhood. I am excited about it. It won’t be long and we will be in the Philippines.

My best friend NJ and me. I love you dear.
There’s a lot of stuff went on at the party that evening – karaoke, disco, and games. Oh how fun. Thanks to our wonderful friends who made our birthday party celebration very successful and amazing.

Playing volleyball in the pool.
Yay for September! Is summer over yet? Nope. It’s still in the 90s here in Texas. Today was 97 F the highest here in Lavon.
It’s Labor Day. One of the official holidays here in the USA. Me and my family are just hanging out at home. Three-day weekend, baby! While my dear husband is grilling some chicken, pork, and sausages, I am relaxing on the couch while our darling daughter was busy playing with her My Little Pony characters. That’s what we love on a summer holiday-barbecue.
I don’t feel like doing much today. I am tired from the long drive last night. My friend invited us to her husband’s birthday party in Fort Worth yesterday. It was a double celebration, actually. Labor Day and birthday party. Most of our friends were there. I met new ones, too. It was nice because I met a girl from a neighboring town from mine in the island where I came from (Leyte, Philippines). What a small world indeed. Anyway, we had so much fun playing volleyball in the swimming pool. My daughter and I arrived at my friend’s house around 1:00 P.M. I still had the time to make some spaghetti.
The party was well-organized and we had lots of fun. My darling daughter enjoyed swimming with her little friend Toby. And she met a new friend too named Beverly. Tip: If you are attending a pool party and you are bringing kids with you, be sure you have life jackets or life preservers ready. And a sunscreen lotion or spray should be handy as well.
My daughter and I got home close to midnight last night. So I am still tired, and sleepy. Have a wonderful Labor Day, everyone! Enjoy!
It’s the month of June, everyone! That means summer is just around the corner. I hope the weather is wonderful in your areas. It has been raining like crazy here in Texas. Some lakes and rivers are overflowing. The one behind our neighborhood is super full that the water is almost on the road. Thankfully it didn’t. It’s supposed to be clear and sunny all week this week. 🙂
The lake’s water level.
Are you and your family excited for the summer vacation? We are. I cannot wait to go on a summer getaway with my family. I hope DD won’t get sick these days because there are so many kids’ activities during summer and party invitations too.
DD was invited to a couple of birthday parties. One was last Saturday and the other one was yesterday. She wasn’t able to go last Saturday because she was not feeling completely well. She caught a cold and ran a fever Friday evening. Her body temperature was 101.3 F and I was very worried. The next day, which is Saturday, she is still feeling weak. So we declined the birthday invitation and I let DD rest a lot on that day.
Then yesterday, Sunday, she said she wanted to go to Avi’s birthday party. So we went and joined Avi’s 8th birthday party held at one of my girl friends’ home. The weather was wonderful. The kids spent most of the afternoon playing in the backyard. Everybody had a great time at the party especially when it was cake time.
They found the swimming pool noodles and played sword fight. 🙂
Avi’s pretty pink Lalaloopsy birthday cake.
And you know what, behind the fun and happiness of this party is also a little sadness. Why? Because Avi and her family is moving. They will be moving to Tennessee next week. We will surely miss them.
